  • Add ½ teaspoon ajwain, turmeric powder, coriander powder, cumin powder, garam masala powder, amchur powder, chat masala powder, Kashmiri red chilli powder, balk or regular salt and ½ tablespoon ginger garlic paste.
  • Let the marination coast the paneer cubes evenly. Once you have mixed it, cover it and keep it aside for 30 minutes.
  • Mix them very well and add one teaspoon lemon juice and mix again. After mixing them, add 200 grams of paneer that is chopped into cubes.

Preparing Green Chutney

  • For making a green chutney, you need to take ½ cup coriander leaves, mint leaves, 1 green chilli, 1 to 2 small garlic cloves, 1inch ginger, ¼ teaspoon amchur powder or ½ teaspoon chat masala, ½ teaspoon roasted cumin powder.
  • If you need, you can add 1 teaspoon water and grind coarsely. As the coriander and mint leaves are rinsed, their moisture help in grinding, so water is optional.
  • Now add 2 tablespoons of hung yoghurt or thick curd and grind them to smooth chutney. Transfer them to a bowl and keep them aside, and if required, you can even refrigerate the chutney.

Preparing veg salad for paneer Frankie

  • To prepare a veg salad, you have to thinly slice 1 medium onion, grated carrots and shred the cabbage. If required, you can also thinly slice them and also slice capsicum. You will need 1/3 cup of grated carrot, shredded or sliced cabbage, thinly sliced capsicum, and thinly sliced onions for the salad.
  • After chopping all the veggies, take them to a bowl and add 1 teaspoon of chat masala, 1 teaspoon lemon juice and ¼ teaspoon Kashmiri red chilli powder. Based on your requirements, you can add salt.
  • After adding the mentioned things, mix everything very well and keep aside.

Kneading Dough

  • Take 1 cup Atta and ¼ teaspoon salt in a mixing bowl or pan.
  • After adding salt and wheat flour, add ½ tablespoon oil and ½ cup water in parts. Initially, add ¼ cup water and add the remaining required amount of water later.
  • Once you add everything, begin to knead. If required, you can add the required amount of water and knead to smooth, soft dough. Once it becomes soft, cover the dough and keep aside for it to rest for 20 to 30 minutes.

Making Rotis for Paneer Frankie

  • Split the dough into small or medium-sized balls after 20 to 30 minutes to work easier. Based on the required size of the wraps, you can make them into balls. Even you can make mini wraps by using small balls.
  • After making them into balls, dust the dough ball with some flour and gently roll to thin roti. The roti that you make should not be so thick so ensure you make them so thin. If you roll them thin, you can even add some more flour when required, but it cannot be made when you roll them thick. If the roti is so thick, then it will become hard to chew.
  • Once you have made roti, place them in hot Tawa and cook the base till you see bubbles appearing on the roti or leave them until it is 1/4th cooked. Before you put the roti on the Tawa, ensure that the Tawa is hot. It is recommended to cook the roti on a medium-high to high flame. Medium to high flame is ideal because Rotis will become like papads when it is cooked in low flame.
  • Next, flip the roti and spread some oil all over it.
  • Again flip roti when the second side is ½ cooked. For even roasting, you can flip them once or twice and press the edges with a spatula so that the edges are cooked well.
  • You need to cook the Rotis until they have some golden blisters on them. Once it is well cooked, you can remove and keep them in a roti basket or in a warm casserole.
  • Repeat the same process to prepare all Rotis and keep them in a casserole so that they stay warm

Preparing Paneer Tikka

  • Heat 2 tablespoons oil in a pan and keep the flame low to medium and the marinated paneer cubes in the pan.
  • Add the entire paneer cubes and after a minute, turn over the paneer cubes. If required, you can also grill paneer cubes in the oven.
  • Pan-fry the cubes until it is cooked and become soft. Just cook the paneer for about 4 minutes on a medium-low flame, and don’t cook too much.

Making Paneer Kathi Roll

  • Take the roti and spread the mint coriander curd chutney over it.
  • Now place the paneer tikka cubes on the centre and top with the veg salad and roll both the sides of the roti, and make a wrap. Wrap half portion of the rolls in butter paper or aluminium foil and serve them with the remaining chutney or tomato ketchup.
